Rudie’s Seafood and Sausage focuses on whole animal butchery and curing. Our seafood is brought in fresh from a few direct sources including Hama Hama Oyster Co. and Kelly and Chris Seafood. Our pigs are raised at Byler Farms, an Amish farm, located in Summertown. We also serve Belgium beer in the traditional style, which includes the appropriate glassware and temperature.
Owner David Mitchell and General Manager Scott Edsall have been working together at Mitchell Delicatessen for years. When it came time to move the deli into our new digs, we decided the old location was ready for something new. That is when the idea of Rudie’s was born.
Scott was born into a love of all things food. Growing up his parents ran a butcher shop focused on wild game. He cut his teeth in catering with Rick Leiding who is now in the Cured Meat Hall of Fame. Yes there is such a place. Scott also has a passion for beer and homebrew which makes him the perfect man to select a great variety of beer and spirits.
David has been honing his craft since his first gig at Chez Jose. He has worn many different hats in the food industry is ready for this next adventure.
